Today I was feeling like something sweet. I was in the mood for a little energizing breakfast that satisfies both my body and mind. On the menu for today is a super simple, easy recipe for some nutritious and delicious PANCAKES!
I love to load my pancakes with the same balance of nutrients that I get in my typical meal. That means, I always have a good ratio of protein, natural sugars, and healthy fats. Balance is key my friends, and these babies have GOT IT ALL!
For all of you paleo/gluten/dairy free beauties, these are also for you to enjoy! This stack fits into just about every category, and they’re completely grain-free, so they also don’t spike your blood sugar…which is a WIN if ya ask me.
Ingredients
1 banana
1 egg
1/3 cup almond flour
1/2 tsp cinnamon
1/2 tsp baking powder
Toppings/Add-ins:
blueberries
almond butter
almond slices
bee pollen
Directions
Mash the banana and whisk in the egg.
Then, stir in the cinnamon, baking powder, and almond flour until just combined.
In a non stick skillet, on medium heat, form 6 round pancakes with a heaping 1/8 cup measure.
Cook for around 1-2 minutes on each side, flipping when bubbles start to form.
For toppings, I did almond butter, slivered almond, blueberries, and bee pollen.
