Cinnamon Coconut Fat Balls

If there’s something outstanding that i’ve learned throughout my health journey, it’s definitely that FAT is GOOD!! Until this point in my life, I was avoiding fat like the plague.. but it turns out, I was really missing out!

Healthy fats are absolutely necessary in stabilizing blood sugars, which increases satiation, so basically they fill you up and keep you fueled for prolonged periods. I mean who doesn’t love sustained energy?? I like to have easy access to healthy fats throughout the day, so you can ALWAYS find me with a stash of fat balls on hand.

These guys are made with just a handful of natural ingredients, and are SUPER low in sugar and high in protein. They’re basically just reaping all the benefits you could ever wish for, and the recipe for these magical balls are below!

1 cup almonds

1/4 cup pumpkin seeds

1/4 cup sunflower seeds

1/2 cup shredded coconut

1/4 cup coconut oil, melted

3 pitted dates (or two for lower sugar)

1 tsp cinnamon

2 tbsp water

cacao nibs, coconut chips

In a food processor, blend together almonds, coconut, and pumpkin + sunflower seeds until only small pieces remain.

Then add in cinnamon, coconut oil, and water and blend until just combined.

For a touch of sweetness and to bind the ingredients together blend 3 pitted dates until completely combined, or stop when a large ball forms from the adhesion of the dough.

Layout parchment paper on a baking sheet, and roll into balls. The dough should be very malleable, but the balls firm up to perfect consistency in the fridge.

Store them in an airtight back in either the fridge or freezer for a firmer ball, and snack on them at any time of day!
