Soo… I was in the kitchen recipe testing (and craving some cookies!) and I just threw a few ingredients together and called it cookie dough, simple right? But, when I tried them, they had the consistency of MACAROONS, like what?!! I swear I was planning on cookies, but these accdiental macaroons are some of the best I’ve ever tasted!
I used just a handful of whole, paleo ingredients, because simplicity is everything my friends! Shaped em’ up and baked them in no time, and now half the batch is gone, so I’d say they were a hit in my house! Check out the deets below:
Ingredients
1 1/2 cups almond pulp
1 cup coconut
1/4 cup agave
1 egg
Toppings/Add-ins:
1/3 cup paleo chocolate chips
Directions
In a medium bowl, whisk together one egg, and agave, then add in coconut and almond pulp.
Once combined, fold in chocolate chips until evenly distributed.
Using a 1 tbsp measure, form ~25 balls and place them on a baking sheet lined with parchment paper.
Bake at 350F for ~18 minutes, or until slightly crispy on the outside.
